Agrifood circuit – Goûtez la route des Baleine

The Duplessis region invokes images of long beaches, archipelagos flocking with birds, and lands and mountains rich in resources of all kinds. But one of the greatest riches of all is the local cuisine. In everything from salads and terrines to stews and grilled dishes, you can sample exotic local fare like wild duck, partridge, rabbit, caribou, scallops, snow crab, the famous Sept-Îles shrimp, razor clams, sea urchins, and even the little-known Stimpson’s surfclam. Today, these foods are considered unique delicacies and are in popular demand in the cities, but they were staples for the earliest settlers who came to share the land with the Montagnais. The first peoples taught the colonists how to hunt, collect wild berries, and recognize the new forest’s many offerings, including wild strawberries, cloudberries (chicoutai), lingenberries (mountain cranberries), blueberries (too often associated only with the Saguenay– Lac-St-Jean region), and raspberries as well as forest cover like wintergreen, fir, birch, and spruce.

The French colonists combined their cooking styles with the land’s resources and built a region that’s as unique in its foods as it is in its soul. When you dine in Duplessis, you’ll have the opportunity to try its berries and aromatics in the form of coulis, jellies, and jams, or fresh with your meal. At times they’ll remind you of grandma’s good home cooking, and at times of the elegance of the finest cuisine.
